Gather all ingredients. Chop the green onions, and if using, dice the carrots. Make sure the kimchi is chopped into smaller pieces if it's not already.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add Kimchi
Stir in the chopped kimchi and cook for about 3-4 minutes, allowing it to caramelize slightly.

Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with the kimchi mixture.

Pour in the soy sauce and sesame oil, and mix thoroughly. Adjust seasoning with salt and black pepper to taste.
