    Prepare the Cabbage

    Slice the Napa cabbage lengthwise into quarters and then chop it into bite-sized pieces. Place the chopped cabbage in a large bowl.

    Salt the Cabbage

    Sprinkle the chopped cabbage with 1 tablespoon of salt. Massage the salt into the cabbage thoroughly and let it sit for about 1 hour. This will draw out excess moisture.

    Prepare the Vegetables

    While the cabbage is salting, julienne the carrot and chop the green onions. Mince the garlic cloves and grate the ginger.

Making Kim Chee

    Mix the Seasoning

    In a small bowl, combine the Korean red pepper flakes, fish sauce, sugar, and minced garlic and ginger. Mix well to form a paste.

    Combine Ingredients

    After the cabbage has sat for an hour, rinse it under cold water to remove excess salt. Drain and return to the large bowl. Add the julienned carrot and green onions to the cabbage.

    Add the Paste

    Add the spice paste to the cabbage mixture. Using your hands (wear gloves to protect your skin), mix everything together until the vegetables are evenly coated with the paste.

Fermentation

    Pack the Mixture

    Pack the kim chee mixture tightly into a clean glass jar, leaving some space at the top for expansion during fermentation.

    Add Water

    Pour enough water into the jar to cover the mixture completely, if necessary. Seal the jar with a lid.

    Ferment

    Leave the jar at room temperature for 1-3 days, depending on your desired level of fermentation. Check daily and refrigerate once it reaches your preferred taste.
