Cook the Rice
Rinse the white rice under cold water until the water runs clear. Add the rice and water to a rice cooker and cook according to the manufacturer's instructions. Alternatively, bring water to a boil in a pot, add rice, reduce heat to low, cover, and simmer for about 18-20 minutes until water is absorbed. Remove from heat and let sit covered for an additional 10 minutes.

Prepare the Soup
In a large pot, bring the chicken broth to a boil. Add the cubed tofu and sliced mushrooms, then lower the heat and let it simmer for about 5 minutes. Stir in the soy sauce and chopped green onions. Cook for another 2 minutes, then remove from heat and set aside.

Chicken Katsu
Flatten chicken breasts to even thickness. Set up a breading station with three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs. Dredge each chicken breast first in flour, then dip into the egg, and finally coat with panko breadcrumbs. In a frying pan, heat vegetable oil over medium heat. Fry each chicken breast for 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

Shrimp Katsu
Peel and devein shrimp, leaving tails on. Set up a breading station with flour, beaten egg, and panko breadcrumbs. Dredge shrimp in flour, dip into egg, and coat with panko. Heat vegetable oil in a frying pan and fry shrimp for 2-3 minutes on each side until golden brown and crispy. Drain on paper towels.
