In a large bowl, combine soy sauce, gochujang, sesame oil, honey, minced garlic, grated ginger, and black pepper to create the marinade. Add the pork shoulder (or belly) and ensure it is evenly coated. Cover and refrigerate for at least 1 hour or overnight for deeper flavor.
