Kalbi Marinade

Kalbi Beef

Shrimp Tempura Batter

For Frying

Method

Kalbi Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, chopped green onions, black pepper, and Korean red pepper flakes. Mix well until the sugar is dissolved.

  2. 2

    Marinate the Beef

Place the flank steak or short ribs in a resealable plastic bag or shallow dish and pour the marinade over the meat. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 2 hours, preferably overnight.

Shrimp Tempura Preparation

  1. 3

    Make the Batter

In a mixing bowl, whisk together all-purpose flour, cornstarch, ice-cold water, and baking powder until just combined. Be careful not to overmix; a few lumps are okay.

  2. 4

    Prepare the Shrimp

Pat the peeled and deveined shrimp dry with paper towels. This step is essential for a crispy texture.

Frying

  1. 5

    Heat the Oil

In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

  2. 6

    Fry the Shrimp

Dip each shrimp into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

  3. 7

    Grill the Kalbi

Preheat a grill or grill pan over medium-high heat. Remove the beef from the marinade and grill for about 5-7 minutes per side or until desired doneness. Let it rest for a few minutes before slicing.
