Kal Bi (Korean BBQ Short Ribs)
Meat Jun (Korean-style Fried Beef)
Method
Kal Bi Preparation
- 1
Marinate the Beef
In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, chopped green onions, black pepper, and grated Asian pear. Mix well to create a marinade.
- 2
Add Beef to Marinade
Add the beef short ribs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
Meat Jun Preparation
- 3
Prepare the Beef
Take the thinly sliced beef and season it with salt and black pepper. Let it sit for about 15 minutes to absorb the seasonings.
- 4
Dredge and Dip
Prepare a plate with all-purpose flour. Dip each slice of seasoned beef into the flour, shaking off any excess. Then, dip the floured beef into the beaten eggs, ensuring it is well coated.
Cooking
- 5
Cook Kal Bi
Preheat a grill or grill pan on medium-high heat. Remove the marinated short ribs from the refrigerator and grill them for 5-7 minutes on each side, or until they are slightly charred and cooked to your desired doneness.
- 6
Fry Meat Jun
In a large skillet, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the egg-coated beef slices. Fry for 3-4 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.
