Preparing the Noodles

Cook the Somen Noodles
Bring a pot of water to boil. Add the somen noodles and cook according to package instructions (typically 3-4 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
Making the Soup Base

Prepare the Soup
In a large bowl, combine 4 cups of water, 1 tablespoon of dashi stock, 2 tablespoons of soy sauce, 1 tablespoon of mirin, and salt to taste. Stir until the dashi stock is fully dissolved. Chill the soup in the refrigerator.
Preparing the Vegetables

Slice the Vegetables
Julienne the cucumber and carrot into thin strips. Chop the green onions finely. Thinly slice the radish. Set aside the prepared vegetables.
Assembling the Dish

Combine and Serve
In serving bowls, place a portion of the cold somen noodles. Pour the chilled soup base over the noodles. Top with the sliced vegetables. Garnish with sesame seeds, torn nori sheet, and wasabi as desired. Serve immediately.
