Marinated Beef

    In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, chopped green onions, and black pepper. Mix well until the sugar is dissolved.

    Slice the beef sirloin against the grain into thin strips. Add the beef to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, preferably overnight for maximum flavor.

Cooking the Beef

    Heat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 3-4 minutes on each side until browned and cooked through. Remove from heat and let it rest for a few minutes before slicing into smaller pieces.

Spicy Mayo

    Prepare the Spicy Mayo

    In a small bowl, mix together mayonnaise, sriracha sauce, and lime juice until smooth and well combined. Adjust the level of sriracha based on your spice preference.

    Warm the corn tortillas on a skillet or grill for about 30 seconds on each side until pliable. Layer shredded lettuce, cooked beef, and a drizzle of spicy mayo on each tortilla. Top with kimchi if desired and sprinkle with sesame seeds.
