Mix Ingredients
In a large mixing bowl, combine the ground beef, soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onion, and black pepper.

Combine Mixture
Mix everything together until just combined. Do not overmix.

Shape Patties
Form the mixture into 4 equal-sized patties.

Cook Patties
Cook each patty for about 4-5 minutes on each side, or until cooked to your desired doneness.
Spicy Mayo

Mix Spicy Mayo
In a small bowl, combine the mayonnaise, Sriracha sauce, and lemon juice.

Adjust Spice Level
Stir until smooth and well combined. Adjust the spice level by adding more Sriracha if desired.
Pickled Vegetables

Prepare Vegetables
In a medium bowl, combine the julienned carrot and cucumber.

In a separate bowl, whisk together the rice vinegar, sugar, and salt until dissolved.

Pickle Vegetables
Pour the pickling liquid over the vegetables and let them sit for at least 30 minutes to pickle.

Toast Buns
Toast the burger buns on the grill or in a toaster until golden brown.

Spread Mayo
Spread a generous amount of spicy mayo on the bottom half of each bun.

Place a lettuce leaf on top of the mayo, followed by the cooked bulgogi patty.

Top with pickled vegetables and sprinkle sesame seeds on top.
