Prepare the Rice
If you don't have cooked jasmine rice, cook it according to package instructions and let it cool completely.

Prep the Vegetables
Julienne the carrot and zucchini, chop the green onions, and mince the garlic.

Prepare the Tofu
Cube the tofu into bite-sized pieces.
Cooking

Sauté Tofu
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove and set aside.

Cook Vegetables
In the same skillet, add another tablespoon of sesame oil. Add minced garlic, and sauté for about 30 seconds. Then add the julienned carrot and zucchini. Stir-fry for about 3-4 minutes until they are tender but still crisp.

Add Spinach
Add the baby spinach and stir until wilted, about 1-2 minutes.

Combine Ingredients
Add the cooked jasmine rice to the skillet, along with the sautéed tofu. Mix well to combine all ingredients.
