Preparation Instructions
- 1
Prepare the Chicken
Preheat your grill or skillet over medium-high heat. Rub the chicken breasts with the southwestern spice rub evenly on both sides. Grill or cook for about 6-7 minutes per side or until cooked through and juices run clear. Remove from heat and let rest.
- 2
Prepare the Vegetables
While the chicken is resting, chop the romaine lettuce, avocado, and tomato into bite-sized pieces. Rinse and drain the black beans and corn.
- 3
Assemble the Salad
In a large bowl, combine the romaine, black beans, corn, avocado, and tomato. Toss gently to mix.
- 4
Add Chicken and Toppings
Slice the grilled chicken and place it on top of the salad. Sprinkle shredded cheddar cheese and lay the BBQ wontons over the top.
- 5
Serve
Drizzle BBQ ranch dressing over the salad and serve immediately.
