Brewing Instructions
1. Mashing
In a large brew kettle, heat 5 liters of water to 162°F (72°C). Add the Pale Malt and Caramel Malt, stirring well. Maintain the temperature at 154°F (68°C) for 60 minutes to allow the sugars to extract.
2. Sparging
After mashing, sparge the grains with enough hot water to collect about 5 liters of wort in the kettle.
3. Boiling
Bring the wort to a boil. Add Citra hops at the beginning of the boil and Mosaic hops with 15 minutes left in the boil. Boil for a total of 60 minutes.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal the fermenter. Allow it to ferment at around 68-72°F (20-22°C) for 1-2 weeks.
6. Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap it. Allow it to carbonate for another 1-2 weeks.
