Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Season the pork belly with salt and black pepper. Place it in a roasting pan and roast for about 2 to 2.5 hours, or until the meat is tender and the skin is crispy. Remove from oven and let it rest before slicing.

In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and black pepper. Adjust seasoning to taste and set aside.

In a large bowl, chop the romaine lettuce, avocado, and tomatoes. Crumble the bleu cheese and cheddar cheese on top.

Assemble the Cobb Salad
Slice the pork belly into bite-sized pieces. Top the salad with the sliced pork belly and sunny side up eggs. Drizzle with apple vinaigrette and serve immediately.
