Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and black pepper. Place it in a roasting pan and cover with foil. Roast for about 2-3 hours until tender. Once done, let it cool slightly and slice into thin strips.

Fry the Pork Belly
In a skillet over medium heat, add olive oil. Add the sliced pork belly and cook until crispy on both sides, about 3-4 minutes per side. Remove from skillet and drain on paper towels.

Prepare the Green Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Optionally, season with a little salt and let them sit for 10 minutes to draw out moisture.

Assemble the Sandwich
Toast the multi-grain bread slices. Spread a generous layer of garlic herb cheese on one side of each slice. Layer the crispy pork belly, green tomato slices, and a handful of spring mix on top. Top with another slice of bread.

Cut the sandwiches in half and serve immediately. Enjoy your Pork Belly BLT!
