Prepare the Dough
In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Doughnuts
Using a spoon or cookie scoop, drop rounded tablespoons of dough into the hot oil. Fry until golden brown, about 2-3 minutes per side.

Drain and Dust
Remove the doughnuts with a slotted spoon and drain on paper towels. In a shallow bowl, mix cinnamon and powdered sugar. Roll the warm doughnuts in the cinnamon sugar mixture.

Serve the fried doughnuts warm with a side of creme anglaise for dipping.
