Batter & Coating

Method

Prep

  1. 1

Peel the bananas and cut each one in half crosswise (giving 8 pieces) or into 3–4 lengthwise pieces if you prefer longer strips. Pat dry with paper towels to remove excess moisture.

  2. 2

Lightly toss the banana pieces with the lemon juice to prevent browning; set aside on a plate.

  3. 3

Set up an assembly station with a shallow bowl for batter, a plate for breadcrumbs (if using), and a clean tray to hold battered bananas before frying.

Make the Batter

  1. 4

In a medium bowl whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, and salt until evenly combined.

  2. 5

In a separate small bowl lightly beat the egg, then whisk in the milk and vanilla extract.

  3. 6

Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick but pourable—if it's too thick, add up to 1–2 tablespoons of milk; if too thin, add 1 tablespoon flour.

Coat the Bananas

  1. 7

Heat the oil in a deep saucepan or heavy-bottomed pot to 350°F (175°C). If you don't have a thermometer, oil should shimmer and a drop of batter will sizzle and float up slowly.

  2. 8

Working quickly, dip each banana piece into the batter, using a fork or tongs to coat evenly. Let excess batter drip back into the bowl.

  3. 9

For extra crunch (optional): immediately roll the battered banana in the breadcrumbs, pressing gently to adhere. Place the coated pieces on a tray while the oil comes to temp (or while frying earlier pieces).

Fry the Bananas

  1. 10

Fry bananas in batches of 3–4 pieces, careful not to overcrowd the pot. Lower the battered banana into the hot oil and fry until golden brown on all sides, about 2–3 minutes per batch. Turn with tongs or a slotted spoon for even coloring.

  2. 11

Use a slotted spoon to transfer the fried bananas to a wire rack set over a baking sheet or to paper towels to drain for about 1 minute, then transfer to a warm plate. Keep finished batches warm in a low oven (200°F / 95°C) if needed.

Make Honey Glaze & Finish

  1. 12

In a small saucepan over low heat, combine the honey and unsalted butter. Warm and stir until the butter melts and the honey becomes fluid and slightly thin, about 1–2 minutes. Remove from heat and stir in the ground cinnamon. Do not overheat the honey—just warm enough to make it pourable.

  2. 13

To serve, arrange fried bananas on a serving plate. Drizzle the warm honey-cinnamon glaze evenly over the bananas. If desired, dust lightly with powdered sugar and sprinkle with chopped toasted walnuts or roasted peanuts for texture.

  3. 14

Serve immediately while warm. Offer extra honey on the side for guests who want more sweetness.
