Prepare the Tofu
Drain the tofu and press it to remove excess moisture. Cut it into small cubes.

Cook the Tofu
In a large skillet, heat olive oil over medium heat. Add the tofu cubes and cook until golden brown, about 5-7 minutes.

Add Vegetables
Add the chopped mushrooms and kale to the skillet. Stir in cumin, smoked paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.

Warm the Black Beans
In a separate pot, warm the sofrito black beans over low heat.

Prepare the Salsa
In a small bowl, combine the diced pineapple and finely chopped habanero pepper to create the salsa.

Assemble the Burrito
Lay a tortilla flat, add a scoop of the tofu mixture, a scoop of black beans, and top with pineapple-habanero salsa. Roll tightly and repeat for remaining tortillas.
