    Prepare the Lamb

    Preheat your oven to 325°F (165°C). Season the lamb shoulder with salt and black pepper. Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the lamb on all sides until golden brown, about 3-4 minutes per side.

    Add Morita Chiles

    Remove the lamb from the skillet and set aside. In the same skillet, add the morita chiles and toast for about 1-2 minutes until fragrant. Return the lamb to the skillet and add enough water to cover half the lamb. Cover with a lid and transfer to the oven.

    Slow Roast

    Roast the lamb in the oven for about 3-4 hours, or until the meat is tender and shreds easily with a fork. Check occasionally and add more water if necessary.

    Prepare Cucumber Salsa

    While the lamb is roasting, prepare the cucumber salsa. Dice the cucumber and red onion, and chop the cilantro. In a bowl, combine the cucumber, red onion, cilantro, lime juice, and season with salt to taste.

    Make Lime Yogurt

    Mix the plain yogurt with lime juice in a separate bowl. Season with salt and pepper to taste.

    Assemble Tacos

    Once the lamb is done, remove it from the oven and let it rest for 10-15 minutes. Shred the lamb with two forks. Warm the tortillas in a skillet or microwave. To assemble, place shredded lamb on a tortilla, top with cucumber salsa and lime yogurt. Serve immediately.
