Prepare the Rajas
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced poblano peppers and sauté until they are tender. Season with salt and pepper, then set aside.

Sear the Queso Fresco
In the same skillet, add another tablespoon of olive oil. Slice the queso fresco into thick slices and sear them in the skillet for about 2-3 minutes on each side until golden brown. Remove from heat.

Warm the Tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are soft and pliable.

Assemble the Tacos
Place a slice of seared queso fresco on each tortilla. Top with guacamole, pico de gallo, and sautéed rajas. Season with additional salt and pepper if desired.

Serve
Serve the tacos immediately while warm, allowing each person to build their own taco.
