    Prepare the Shrimp Filling

    In a skillet, heat olive oil over medium heat. Add minced garlic and diced onion, and sauté until translucent. Add shrimp, cumin, salt, and black pepper. Cook until shrimp is pink and cooked through, about 3-4 minutes. Remove from heat.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). In a separate bowl, mix half of the red enchilada sauce with the cooked shrimp mixture. Take a corn tortilla, fill it with the shrimp mixture, roll it up, and place it seam-side down in a baking dish. Repeat with remaining tortillas and shrimp mixture.

    Add Sauce and Bake

    Pour the remaining red enchilada sauce over the rolled enchiladas. Sprinkle shredded cheese on top. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Serve

    Remove from oven and let cool for a few minutes. Serve topped with cremayo and shaved fennel.
