    Prepare the Green Rice

    In a pot, cook 1 cup of rice with 2 cups of water and a pinch of salt until fluffy. Stir in chopped cilantro and set aside.

    Make the Olive-Caper Sauce

    In a skillet, heat olive oil over medium heat. Sauté garlic and onion until translucent. Add diced tomatoes and bell pepper; cook until soft. Stir in olives, capers, lime juice, salt, and pepper. Let simmer for 5 minutes.

    Cook the Red Snapper

    Season red snapper fillets with salt and pepper. In a separate pan, heat remaining olive oil over medium-high heat. Sear the fillets for about 4-5 minutes on each side or until cooked through and flaky.

    Place a serving of green rice on each plate, top with the red snapper fillet, and generously drizzle with the olive-caper sauce. Garnish with additional cilantro if desired.
