Roast the Garlic
Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Place in the oven and roast for 30-35 minutes until the cloves are soft and golden.

Prepare the Onion
While the garlic is roasting, peel and slice the white onion into thin rings. Drizzle with the remaining tablespoon of olive oil and season with salt and black pepper. Set aside.

Serve
Transfer the mixture to a serving dish. This dish can be served warm or at room temperature as a dip or accompaniment.
