    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Place in the oven and roast for 30-35 minutes until the cloves are soft and golden.

    Prepare the Onion

    While the garlic is roasting, peel and slice the white onion into thin rings. Drizzle with the remaining tablespoon of olive oil and season with salt and black pepper. Set aside.

    Grill the Onion

    Heat a grill pan or outdoor grill over medium heat. Once hot, add the onion rings and grill for about 3-4 minutes on each side until they are tender and have nice grill marks. Remove from heat.

    Combine Ingredients

    Once the garlic is done roasting, allow it to cool slightly before squeezing the soft cloves out of their skins into a bowl. Add the grilled onion and chopped basil leaves to the bowl. Mix well and adjust seasoning with salt and pepper to taste.

    Serve

    Transfer the mixture to a serving dish. This dish can be served warm or at room temperature as a dip or accompaniment.
