    Roast the Poblanos

    Preheat your oven to 425°F (220°C). Place the poblano peppers on a baking sheet and roast them in the oven for about 15-20 minutes, turning occasionally, until the skin is blistered and charred. Remove from the oven, cover them with a kitchen towel, and let them steam for about 10 minutes. Once cooled, peel the skin off, remove the seeds, and chop the peppers.

    Cook the Rice

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Add the rice and toast for 2-3 minutes, stirring frequently. Pour in the vegetable broth, add salt and pepper, and bring to a boil. Cover and reduce heat to low, cooking for about 15-18 minutes or until the rice is tender and the liquid is absorbed.
