Incorporate Eggs
Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Prepare for Frying
In a deep frying pan or pot, heat vegetable oil to 375°F (190°C). Line a baking sheet with paper towels.

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4-6 inch long churros directly into the hot oil, cutting them with scissors.

Fry the Churros
Fry churros until golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.

Coat with Cinnamon Sugar
In a shallow dish, combine 1 cup of granulated sugar and cinnamon. Roll the hot churros in the mixture to coat.

Serve churros warm with Mexican chocolate dipping sauce.
