    Prepare the Sauce

    In a blender, combine the smoked yellow tomatoes, garlic, cumin, chili powder, and salt. Blend until smooth and set aside.

    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Slice the onion and add it to the skillet. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 10-15 minutes.

    Prepare the Filling

    In a bowl, combine the black beans, half of the caramelized onions, and half of the Chihuahua cheese. Mix well and season with salt and pepper to taste.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, fill it with the black bean mixture, roll it up, and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Pour the smoked tomato sauce evenly over the enchiladas. Sprinkle the remaining Chihuahua cheese on top.

    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
