Prepare Taco Filling

Chop Vegetables
Dice the zucchini, bell pepper, and red onion into small, uniform pieces.

Grill the Vegetables
In a large skillet, heat olive oil over medium-high heat. Add the chopped zucchini, bell pepper, and red onion. Sprinkle with cumin, salt, and black pepper. Cook for about 8-10 minutes until vegetables are tender and slightly charred.
Make Avocado Sauce

Prepare Ingredients
Cut the ripe avocado in half, remove the pit, and scoop the flesh into a blender.

Blend the Sauce
Add lime juice, garlic clove, and salt to the blender with the avocado. If using, add fresh cilantro. Blend until smooth and creamy. Adjust seasoning to taste.
Assemble Tacos

Warm Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Place a generous amount of the grilled vegetable mixture in the center of each tortilla.
