    Cook Rice

    In a pot, add 1 cup of rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until rice is tender and water is absorbed.

    Prepare the Vegetables

    Chop the zucchini, squash, onion, tomato, bell pepper, green onions, and mushrooms into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and sauté for 2-3 minutes until they start to become translucent.

    Add zucchini, squash, bell pepper, and mushrooms to the skillet. Sprinkle with salt, black pepper, and cumin. Sauté for an additional 5-7 minutes until the vegetables are tender.

    Add chopped tomatoes and green onions to the skillet. Stir and cook for another 2-3 minutes until heated through.

    Warm Tortillas

    In a separate pan, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable.

Serving

    Assemble the Fajitas

    On a serving plate, place a warm tortilla, and fill it with a generous portion of sautéed vegetables. Add rice and beans on the side.

    Top with a dollop of sour cream and serve with a side salad.
