Marinating the Pork

    Prepare the Marinade

    In a blender, combine the adobo sauce, garlic cloves, cumin, oregano, black pepper, salt, and lime juice. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place them in a large bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat the grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sear for about 15-20 minutes, turning occasionally, until the pork is cooked through and has a nice char.

    Rest and Chop

    Once cooked, remove the pork from the heat and let it rest for 10 minutes. Chop it into small pieces.

    Prepare the Pineapple

    Dice the fresh pineapple into small pieces.

    Warm the Tortillas

    Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until pliable.

    To assemble, place a generous amount of chopped pork on each tortilla, top with diced pineapple, fresh cilantro, and diced onion. Serve with lime wedges on the side.
