Enchiladas Preparation

Cook the Meat
In a skillet over medium heat, cook the ground beef or shredded chicken until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Prepare the Enchiladas
Preheat your oven to 350°F (175°C). In a separate bowl, mix the cooked meat with half of the enchilada sauce. Take a corn tortilla, fill it with about 1/3 cup of the meat mixture, roll it up, and place it seam side down in a baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

Assemble the Dish

Prepare Toppings
While the enchiladas and rice are cooking, prepare the toppings. Shred the lettuce, dice the tomato, and set aside.

Serve
To serve, place two enchiladas on a plate, add a scoop of rice on the side, and top with shredded lettuce, a dollop of sour cream, and diced tomatoes.
