Method

Marinating the Steak

    Prepare the Marinade

    In a bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper until well combined.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Steak

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Steak

    Remove the steak from the marinade and discard the marinade. Place the steak on the grill and cook for about 4-6 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Sautéing the Vegetables

    Heat the Oil

    In a large skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook the Vegetables

    Add the sliced bell pepper and red onion to the skillet. Season with salt and black pepper. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

Assembling the Fajitas

    After resting, slice the grilled steak thinly against the grain.

    On a warm flour tortilla, layer slices of steak, sautéed vegetables, and your choice of sour cream, salsa, and guacamole. Roll up the tortilla and enjoy your steak fajitas!
