Taco Preparation

    Cook the Beef

    In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

    Add Taco Seasoning

    Stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes until the mixture thickens.

    Assemble Tacos

    Fill each taco shell with a portion of the beef mixture, then top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and jalapeños.

Beef Enchilada Preparation

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    Prepare Tortillas

    In a large bowl, combine the cooked ground beef, chopped onions, and half of the enchilada sauce.

    Fill and Roll

    Place a scoop of the beef mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

Rice or Beans Preparation

    Cook the Rice

    In a saucepan, combine the white rice, water, olive oil, salt, and pepper. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.

    Prepare Beans

    While the rice is cooking, heat the canned black beans in a small pot over medium heat until warmed through.
