Prepare the Dough

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

Add Wet Ingredients
Add the vegetable oil and warm water to the dry ingredients. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Knead and Rest
Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Cover with a clean kitchen towel and let rest for at least 30 minutes.
Shape and Fry

Roll Out the Dough
After resting, divide the dough into 8 equal portions. Roll each portion into a circle about 1/8 inch thick.

Heat Oil
In a deep skillet or frying pan, heat the vegetable oil for frying over medium-high heat until it reaches 375°F (190°C).

Fry the Sopapillas
Carefully add one or two rolled dough pieces into the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes on each side. Remove and drain on paper towels.

Prepare the Topping
In a small bowl, mix the granulated sugar and ground cinnamon together.

Add Honey and Ice Cream
Drizzle honey over the sopapillas and serve with scoops of vanilla ice cream on the side.
