Chorizo Preparation

    Cook the Chorizo

    In a skillet over medium heat, add 1 tablespoon of olive oil. Remove the casing from the chorizo sausage and crumble it into the skillet. Cook until browned, about 5-7 minutes.

    Add Aromatics

    Finely chop the garlic and onion. Add them to the skillet with the chorizo and cook for an additional 3-4 minutes until the onion is translucent.

    Combine Cheese Ingredients

    In a large mixing bowl, combine the Monterey Jack cheese, queso blanco, cream cheese, and milk. Mix until well combined and smooth.

    Mix Chorizo with Cheese

    Once the chorizo mixture is ready, add it to the cheese mixture and stir until evenly distributed.

    Melt the Cheese Mixture

    Transfer the combined mixture to an oven-safe dish and bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is bubbly and golden.

    Prepare for Serving

    Finely chop fresh cilantro and slice the jalapeño. Once the Queso Fundido is out of the oven, sprinkle cilantro and jalapeños on top.

    Serve hot with tortilla chips for dipping.
