    Chop the Vegetables

    Start by peeling the onion and slicing it thinly. Next, remove the seeds from the bell pepper and slice it into thin strips.

    Mix the Cheese

    In a mixing bowl, combine the cheddar and mozzarella cheeses, and set aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, season with salt and black pepper, and sauté for about 5-7 minutes, until they are tender and slightly caramelized.

    Assemble the Quesadillas

    Spread half of the cheese mixture over one half of each tortilla. Top with a portion of the sautéed vegetables and then sprinkle the remaining cheese mixture over the vegetables. Fold the tortillas in half.

    Cook the Quesadillas

    In the same skillet, add the remaining tablespoon of olive oil. Place the folded quesadillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. You may need to do this in batches.

Serving

    Slice and Serve

    Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve hot with your choice of salsa or guacamole.
