Quesadilla Preparation

    Prepare the Filling

    In a bowl, combine the cooked chicken or beef with half of the shredded cheese. Mix well.

    Assemble the Quesadilla

    On a clean surface, lay one flour tortilla. Spread the meat and cheese mixture evenly over half of the tortilla, then top with a handful of shredded lettuce. Fold the tortilla in half.

    Cook the Quesadilla

    In a skillet, heat 1 tablespoon of olive oil or butter over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas.

Rice and Beans Preparation

    Cook the Rice

    In a saucepan, combine the white rice, 2 cups of vegetable broth (or water), and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.

    Sauté the Onion and Garlic

    In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

    Add the Beans

    Stir in the drained black beans into the skillet with the onion and garlic. Season with salt and pepper, and cook until heated through, about 5 minutes.
