Cooking the Rice

Prepare the Mexican Rice
In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of Mexican rice and reduce heat to low. Cover and simmer for 20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork before serving.
Cooking the Beans

Prepare the Beans
In a small saucepan, heat 1 cup of black beans and 1 cup of pinto beans over medium heat. Stir occasionally until warmed through, about 5-7 minutes. Optionally, season with salt and pepper to taste.
Cooking the Fillings

Cook the Ground Beef
In a skillet over medium heat, add 1 lb of ground beef. Cook until browned, breaking it apart with a spatula, about 7-10 minutes. Drain excess fat and set aside.

Prepare the Shredded Chicken
If using pre-cooked shredded chicken, warm it in a saucepan over medium heat for about 5 minutes. If cooking from raw, boil chicken in water until cooked through, about 15-20 minutes, then shred.

Assemble Your Plate
On a plate, serve a generous portion of Mexican rice alongside your choice of black or pinto beans. Choose any three fillings from ground beef, shredded chicken, shredded cheese, or refried beans to add on top of the rice and beans.
