Our sizzling version of either steak or chicken fajitas served on a gigantic bed of crispy tortilla chips with cheese sauce.

Prepare the Fajitas

    Cook the Protein

    Heat olive oil in a skillet over medium-high heat. Add chicken breast or steak and sear on both sides until cooked through, about 6-8 minutes for chicken and 4-5 minutes per side for steak. Remove from skillet, let rest, and slice thinly.

    Sauté the Vegetables

    In the same skillet, add sliced onions and bell peppers. Sprinkle with fajita seasoning and sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized.

Make the Cheese Sauce

    Start the Roux

    In a saucepan over medium heat, melt butter. Whisk in flour to create a roux and cook for 1-2 minutes until bubbly.

    Add Milk

    Gradually whisk in milk, stirring continuously until the mixture thickens, about 3-5 minutes.

    Incorporate Cheeses

    Lower the heat and stir in shredded cheddar cheese and cream cheese until fully melted and smooth. If desired, add sliced jalapeños for extra heat.

Assemble the Nachos

    On a large platter, spread out tortilla chips in an even layer.

    Top the chips with the sautéed fajita mixture of chicken or steak and vegetables.
