Main Ingredients

Method

Preparation

  1. 1

    Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce heat to low, cover, and let simmer for 18-20 minutes or until water is absorbed. Fluff with a fork and set aside.

  2. 2

    Prepare the Beans

If using canned black beans, rinse and drain them. Heat them in a small saucepan over medium heat until warmed through. Season with salt and pepper to taste.

  3. 3

    Prepare the Chicken or Steak

If using chicken, slice the chicken breast into thin strips. If using steak, slice it against the grain into thin strips.

  4. 4

    Marinate the Meat

In a bowl, combine olive oil, cumin, chili powder, salt, and black pepper. Add the sliced chicken or steak and toss to coat. Let marinate for at least 15 minutes.

Cooking

  1. 5

    Cook the Meat

Heat a large skillet over medium-high heat. Add the marinated chicken or steak and cook for 5-7 minutes, stirring occasionally until fully cooked and browned.

  2. 6

    Sauté Vegetables

In the same skillet, add sliced onion and bell pepper. Sauté for 3-4 minutes until softened and slightly caramelized.

  3. 7

    Warm the Tortillas

In a separate skillet or directly over the flame, warm the flour tortillas for about 30 seconds on each side until soft and pliable.

Assembly

  1. 8

    Assemble the Fajitas

On each warmed tortilla, layer the cooked chicken or steak, sautéed vegetables, a spoonful of rice, black beans, shredded lettuce, diced tomato, and a dollop of sour cream.

  2. 9

    Serve

Fold the tortillas in half and serve with additional toppings or sides as desired.
