Cook the Chicken
In a skillet over medium heat, add 1 tablespoon of olive oil. Season the chicken breast with fajita seasoning and cook for 6-7 minutes on each side or until fully cooked. Remove from skillet and let it rest before slicing.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add sliced bell peppers and onion. Sauté for about 5-7 minutes until they're tender and slightly caramelized. Season with additional fajita seasoning if desired.

Assemble the Quesadillas
On half of each tortilla, layer some of the sautéed vegetables, sliced chicken, and a generous portion of shredded cheese. Fold the tortilla over to create a half-moon shape.

Cook the Quesadillas
In a clean skillet over medium heat, place the folded quesadillas one or two at a time. Cook for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.

Cut each quesadilla into wedges and serve with sour cream, salsa, and fresh cilantro on the side.
