Preparing the Proteins

    Cook the Meat

    In a skillet over medium heat, add the fajita chicken, steak, or pork. Sprinkle with fajita seasoning, salt, and black pepper. Cook until the internal temperature reaches 165°F for chicken or 145°F for steak and pork, about 6-8 minutes. Remove from skillet and let rest for a few minutes before slicing.

Sautéing the Vegetables

    Sauté the Veggies

    In the same skillet, add sliced onions and bell peppers. Sauté for about 5-7 minutes until softened. Add salt and pepper to taste.

Assembling the Fajitas

    Layer Ingredients

    On one half of each flour tortilla, layer cooked rice, sliced meat, sautéed vegetables, lettuce, and diced tomatoes. Top with a spoonful of sour cream.

Cooking the Quesadilla

    Cook the Quesadilla

    Fold the tortillas over to cover the filling. Wipe the skillet clean and return to medium heat. Cook each quesadilla for 3-4 minutes on each side until golden brown and crispy.

Serving

    Slice the quesadillas into triangles and serve hot with additional sour cream and salsa on the side if desired.
