Method

Carnitas

  1. 1

    Prepare the Pork

Cut the pork shoulder into chunks and season with salt, pepper, cumin, and oregano.

  2. 2

    Cook the Pork

In a slow cooker, combine the seasoned pork, minced garlic, orange juice, and lime juice. Cook on low for 8 hours or until the pork is tender and easily shredded.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it with two forks.

Rice

  1. 4

    Cook the Rice

In a medium saucepan, bring water to a boil. Add rice and 1 tsp of salt. Reduce heat to low, cover, and cook for about 18-20 minutes or until the rice is tender and water is absorbed.

Beans

  1. 5

    Heat the Beans

In a small saucepan, heat the canned black beans over medium heat. Add cumin and salt, stirring occasionally until warmed through.

Salad

  1. 6

    Prepare the Salad

In a bowl, combine chopped romaine lettuce, diced tomato, and diced cucumber. Drizzle with olive oil and lime juice, and season with salt to taste. Toss to combine.

Tortillas

  1. 7

    Warm the Tortillas

Heat flour tortillas on a skillet over medium heat for about 30 seconds on each side until warm and pliable.
