Preparation of Rice

Rinse the Rice
Place the long-grain white rice in a fine-mesh sieve and rinse under cold water until the water runs clear, removing excess starch.

Soak the Rice
In a large bowl, combine the rinsed rice and 4 cups of water. Let it soak for at least 3 hours or overnight for best results.
Blending and Flavoring

Blend the Mixture
After soaking, transfer the rice and water to a blender. Add the cinnamon stick and blend on high speed until the rice is finely ground and the mixture is milky white, about 1-2 minutes.

Strain the Mixture
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a large bowl or pitcher, discarding the solid rice bits.

Chill and Serve
Refrigerate the horchata for at least 30 minutes to chill. When ready to serve, pour into glasses over ice and sprinkle with ground cinnamon on top.
