    Cook the Beef

    In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Vegetables and Spices

    Add the diced onion and minced garlic to the skillet. Cook for another 3-4 minutes until the onion is soft. Stir in chili powder, cumin, salt, and black pepper. Mix well and cook for 2 more minutes.

    Add Refried Beans

    Stir in the refried beans until everything is well combined and heated through. Remove from heat and set aside.

Assembling Enchiladas

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Fill Tortillas

    Take a corn tortilla and spoon about 2-3 tablespoons of the beef mixture onto the center. Roll the tortilla tightly and place it seam-side down in a greased 9x13 inch baking dish.

    Repeat Filling

    Repeat the filling process until all tortillas are filled and placed in the baking dish.

    Add Sauce and Cheese

    Pour the enchilada sauce evenly over the filled tortillas. Sprinkle the shredded cheese on top.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
