Method

Prepare the Filling

  1. 1

    Sauté Onion

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

  2. 2

    Combine Chicken and Spices

Add the cooked shredded chicken to the skillet. Stir in ground cumin, salt, and black pepper. Cook until heated through, about 5 minutes.

Assemble the Enchiladas

  1. 3

    Preheat Oven

Preheat the oven to 350°F (175°C).

  2. 4

    Prepare Baking Dish

Spread a thin layer of enchilada sauce on the bottom of a baking dish.

  3. 5

    Fill and Roll Tortillas

Take a corn tortilla and spoon some of the chicken filling into the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat for all tortillas.

  4. 6

    Add Sauce

Once all tortillas are filled and in the baking dish, pour the remaining enchilada sauce over the top, ensuring all tortillas are covered.

  5. 7

    Add Cheese

Sprinkle the shredded cheese evenly over the top of the enchiladas.

Bake the Enchiladas

  1. 8

    Bake Covered

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

  2. 9

    Bake Uncovered

After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve

  1. 10

    Serve and Enjoy

Remove the enchiladas from the oven and let them cool for a few minutes. Serve hot, garnished with sour cream, chopped cilantro, and sliced jalapeños.
