    Sauté Vegetables

    Chop the onion and bell peppers into small pieces. In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the chopped onion and sauté for 2-3 minutes until translucent. Add the bell peppers and cook for an additional 3-4 minutes until they are tender. Remove from heat.

    Prepare Rice and Beans

    If using uncooked rice, prepare according to package instructions. For beans, if using canned, drain and rinse them under cold water. If using dried beans, soak and cook them according to package instructions.

Assembling Burritos

    Layer Ingredients

    Place a flour tortilla on a clean surface. Start by adding 1/2 cup of rice, followed by 1/4 cup of beans, sautéed onion and pepper mixture, 1/2 cup of shredded lettuce, and 1/4 cup of diced tomato. Top with 1/4 cup of shredded cheese and a dollop of sour cream.

    Wrap the Burrito

    To wrap the burrito, fold in the sides of the tortilla over the filling, then roll from the bottom up tightly. Ensure all ingredients are enclosed within the tortilla. Repeat the process for the remaining tortillas and filling.

    Cut the burrito in half if desired and serve immediately. You can pair with additional sour cream or salsa on the side.
