Cooking the Base

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and a pinch of salt. Reduce heat, cover, and simmer for 18-20 minutes until the rice is fluffy. Remove from heat and let sit for 5 minutes before fluffing with a fork.

    Prepare the Beans

    If using canned black beans, rinse and drain them. In a small saucepan, heat 1 cup of black beans over medium heat until warmed through, about 5 minutes. Add cumin, salt, and black pepper to taste.

    Grill the Chicken

    Season the chicken breast with olive oil, cumin, salt, and black pepper. Grill over medium heat for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F / 75°C). Let rest for a few minutes before slicing.

Assembling the Bowl

    Prep the Toppings

    While the rice and chicken are cooking, chop the cherry tomatoes, dice the avocado, and prepare the shredded lettuce.

    Build the Bowl

    In a large bowl, start with a base of rice. Layer on the warmed black beans, sliced grilled chicken, and your choice of toppings: cherry tomatoes, avocado, shredded lettuce, cheddar cheese, and a dollop of sour cream.

    Drizzle lime juice over the top and sprinkle with fresh cilantro for added flavor. Serve immediately.
