Cook the Rice

In a medium pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce the heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Prepare the Beans

If using canned beans, rinse and drain them. If using dried beans, soak them overnight and cook according to package instructions until tender.

Chop the Vegetables

Dice the onions and peppers into small pieces. Chop the tomatoes into cubes. Set aside.

Prepare the Lettuce

Wash the lettuce leaves thoroughly. Tear or chop them into bite-sized pieces and set aside.

Grate the Cheese

Grate or crumble the cheese into small pieces and set aside.

Assembly

Layer the Ingredients

In a large bowl, start by placing a base layer of cooked rice. Next, add a layer of beans on top of the rice.

Add Vegetables

Sprinkle the diced onions and peppers over the beans, followed by the chopped tomatoes.

Top with Lettuce and Cheese

Add the torn lettuce leaves on top of the vegetables, and then sprinkle the grated cheese over the lettuce.

Finish with Sour Cream

Finally, add dollops of sour cream on top of the salad bowl. Optionally, you can add salsa or hot sauce for extra flavor.
