Prepare the Steak

    Marinate the Steak

    In a bowl, combine the olive oil, salt, black pepper, garlic powder, and cumin. Add the steak and coat it well with the marinade. Let it sit for at least 30 minutes.

    Grill the Steak

    Preheat a grill or skillet over medium-high heat. Grill the marinated steak for about 5-7 minutes on each side, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing it thinly.

Prepare the Onions

    Sauté the Onions

    In the same skillet, add a little olive oil if needed. Add the sliced onion and sauté over medium heat until they become translucent and slightly caramelized, about 5-7 minutes.

Assemble the Acapulco Cheesesteak

    Fill the Tortillas

    Lay a flour tortilla flat and place a portion of sliced steak in the center. Top with sautéed onions and drizzle with nacho cheese sauce.

    Wrap the Tortilla

    Fold in the sides of the tortilla and then roll it from the bottom up to encase the filling. Repeat with the remaining tortillas.

Serve

    Serve the Acapulco Cheesesteaks with a side of lettuce, sour cream, pico de gallo, rice, and beans on the side.
