Prepare Enchiladas

Prepare Filling
In a large bowl, combine shredded chicken, ground beef, and cheese. Mix until well incorporated.

Assemble Enchiladas
Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a large baking dish. Take a corn tortilla, fill it with the filling mixture, roll it up, and place it seam-side down in the baking dish. Repeat until all tortillas are filled.

Top with Sauce
Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top, ensuring they are well covered. Sprinkle additional cheese on top if desired.

Cook the Sauce
In a saucepan, combine diced tomatoes, chopped onion, and finely chopped jalapeño. Cook over medium heat until the mixture becomes soft and fragrant, about 10 minutes.

Stir in chopped cilantro and lime juice. Let it simmer for an additional 5 minutes. Remove from heat and set aside.
