Method

Prepare Enchiladas

  1. 1

    Prepare Filling

In a large bowl, combine shredded chicken, ground beef, and cheese. Mix until well incorporated.

  2. 2

    Assemble Enchiladas

Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a large baking dish. Take a corn tortilla, fill it with the filling mixture, roll it up, and place it seam-side down in the baking dish. Repeat until all tortillas are filled.

  3. 3

    Top with Sauce

Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top, ensuring they are well covered. Sprinkle additional cheese on top if desired.

  4. 4

    Bake

Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Prepare Ranchero Sauce

  1. 5

    Cook the Sauce

In a saucepan, combine diced tomatoes, chopped onion, and finely chopped jalapeño. Cook over medium heat until the mixture becomes soft and fragrant, about 10 minutes.

  2. 6

    Finish the Sauce

Stir in chopped cilantro and lime juice. Let it simmer for an additional 5 minutes. Remove from heat and set aside.

Prepare Sides

  1. 7

    Cook Mexican Rice

Prepare Mexican rice according to package instructions.

  2. 8

    Heat Refried Beans

In a saucepan, heat refried beans over medium heat, stirring occasionally until heated through.

  3. 9

    Prepare Dips

Serve guacamole and cheese dip in separate bowls.

  4. 10

    Prepare Chips and Salsa

Open bags of tortilla chips and pour salsa into a serving bowl.
