Prepare Enchiladas

Preheat Oven
Preheat your oven to 375°F (190°C).

Fill Tortillas
In a large mixing bowl, combine shredded chicken, ground beef, or cheese. Take a tortilla and fill it with roughly 1/4 cup of the filling. Roll the tortilla tightly and place it seam-side down in a baking dish.

Top with Ranchero Sauce
Once all tortillas are filled and placed in the baking dish, pour ranchero sauce evenly over the top of the enchiladas.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the sauce is bubbling and the edges of the enchiladas are slightly crisp.

Cook Mexican Rice
In a large pot, prepare the Mexican rice according to package instructions, typically simmering with water, spices, and some oil until tender.

In a saucepan, heat the refried beans over medium heat, stirring occasionally until warmed through.

Place tortilla chips in a serving bowl and serve alongside salsa.
